Mandarin Lettuce Salad

From Gina Johnson (family recipe)

½ head shredded lettuce (or equivalent amount of loose leaf lettuce)

1 c sliced sugar snap peas

2 scallions, sliced with tops

2 small cans mandarin oranges, drained

Caramelized almonds (see below)

1 t minced fresh parsley, for garnish


Toss all ingredients with dressing and sprinkle the top with almonds and minced parsley.

Dressing:

½ t salt

2 T sugar

2 T white vinegar

¼ c salad oil

Mix together until salt and sugar dissolve.

Caramelized Almonds:

2 T sugar

¼ c sliced almonds

Stir together in skillet over medium heat until sugar melts onto almonds.  Cool on plate.
