Zucchini Bread

From Gina Johnson (family recipe)

3 eggs

1 c vegetable oil

2 c sugar

2 c peeled and finely grated zucchini

3 t vanilla

3 c flour

1 t salt

3 t cinnamon

¼ t baking powder

1 t baking soda

Beat eggs; add sugar, oil, zucchini, and vanilla and mix well.  Mix dry ingredients together and add, stirring until well mixed.  Bake at 325⁰ F in bread loaf pans or muffin pans.  Time will depend on the pans you use.  Toothpick inserted in center should come out clean, and tops should be slightly golden.
